Simple Recipes: brussels sprouts
I always wanted to like brussels sprouts but I could NOT stand the taste.
I think the conditioning of the media helped with that — every time you watch a show everyone always dreads eating the brussels sprouts
I searched and searched online for a good recipe - so many claimed these would be the best tasting brussels sprouts ever - marinate with honey or maple syrup or cayenne … none of them were good.
I cant believe all it took was some butter and 3 seasonings to CHANGE EVERYTHING.
Now I look forward to making these nutrient dense cruciferous vegetables.
According to a study done in 2015, cruciferous foods were found to have chemoprotective effects of liver cancer.
Cruciferous vegetables have also been shown to induce CYP1 enzymes which are responsible for metabolizing carcinogens, hormones and pharmaceuticals.
Brussels sprouts are only one example of cruciferous vegetables, they also include: broccoli, cauliflower, cabbage, daikon, arugula, bok choy
I always cook my food with butter - because its a saturated fat and the most heat stable against oxidation (more on this in another post) its a bonus that it makes everything taste amazing. Butter is often villainized because it causes clogged arteries or something to avoid if you want to lose weight. Keep in mind that context is everything. Good quality butter can be nutrient dense and beneficial to many people (check out by benefits of cholesterol instagram post). My rule is always to cook foods (a process that involves heat) with saturated fat, always. Saturated fats also include: coconut oil, ghee, tallow.
RECIPE:
melted butter
salt
pepper
garlic powder
onions
How I melt by butter is by putting it into a heat resistant bowl and leaving it in the oven for about a minute while the stove pre heats.
You can be flexible with the temperatures, ive cooked them at 400 degrees and at 350 depending on if I had something else cooking at the same time. Obviously the higher the temperature shorter cooking time.
STEPS:
pre heat oven to 400 degrees Celsius
wash and chop brussels sprouts
melt butter and add brussels sprouts
season with: salt, pepper and garlic powder
add to the over for about 20 to 30 minutes
chop onions and add to the brussels sprouts about half way through cooking — to add flavour and prevent burning the onions
